Ingredients
In this Nouvelle cuisine version of Tiramisù, we elevate the presentation and refine the flavors. The traditional heavy cream is replaced with a lighter mascarpone cream, allowing the delicate flavors to shine through. Preparation

1.In a mixing bowl, beat the egg yolks with half of the sugar until pale and creamy.

3.In a separate bowl, beat the egg whites with the remaining sugar until stiff peaks form.

4.Gently fold the beaten egg whites into the mascarpone mixture until fully incorporated.

5.Dip each ladyfinger into the cooled espresso (and coffee liqueur, if using) and arrange them in a single layer in a serving dish.

6.Spread half of the mascarpone cream over the ladyfingers.

7.Repeat the process with another layer of soaked ladyfingers and the remaining mascarpone cream.

8.Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld.
