Preparation

    In a heatproof bowl, whisk together the egg yolks and sugar until well combined.

    Place the bowl over a saucepan of simmering water, making sure the bottom of the bowl does not touch the water.

    Slowly whisk in the milk and cook, stirring constantly, until the mixture thickens and coats the back of a spoon. Remove from heat and let it cool.

    In a separate bowl, whip the heavy cream until stiff peaks form.

    In another bowl, beat the mascarpone cheese and vanilla extract until smooth. Gently fold in the whipped cream.

    Dip each ladyfinger into the cooled coffee mixture (add rum if desired) and arrange them in a single layer in a rectangular dish.

    Spread half of the mascarpone cream mixture over the ladyfingers.
