1.Heat the vegetable oil in a large pot over medium heat.

2.Add the lamb chunks to the pot and sear them until browned on all sides. Remove the lamb from the pot and set aside.

3.In the same pot, add the onions and garlic. Sauté until the onions are translucent.

4.Add the ground coriander, cumin, paprika, dried thyme, salt, and black pepper to the pot. Stir well to coat the onions and garlic with the spices.

5.Return the lamb to the pot and add the diced tomatoes, carrots, potatoes, and broth. Stir to combine.

6.Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together.
