In the original Italian Tortelli dolci, the filling typically consists of ingredients like ricotta cheese, sugar, and citrus zest. However, in our Madurese adaptation, we replace these ingredients with palm sugar, grated coconut, and aromatic spices to infuse the dish with the unique flavors of Madurese cuisine. Additionally, we serve the Madurese Sweet Tortelli with coconut milk and toasted coconut flakes, which are not traditionally used in the Italian version. Preparation

    In a large mixing bowl, combine the all-purpose flour and salt. Gradually add the water and vegetable oil, and knead until a smooth dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.

    In a separate bowl, mix the grated palm sugar, grated coconut, ground cinnamon, and ground nutmeg until well combined. Set aside.

    On a lightly floured surface, roll out the dough into a thin sheet. Using a round cookie cutter or a glass, cut out circles of about 3 inches in diameter.

    Place a small spoonful of the filling in the center of each dough circle. Fold the circle in half to form a half-moon shape and press the edges firmly to seal.
