Preparation

1.In a large mixing bowl, combine the flour, sugar, salt, yeast, mahleb, mastiha, cinnamon, nutmeg, and orange zest.

2.In a separate bowl, whisk together the warm milk, melted butter, eggs, vanilla extract, and orange juice.

3.Make a well in the center of the dry ingredients and pour in the wet mixture. Stir until a sticky dough forms.

4.Transfer the dough onto a lightly floured surface and knead for about 10 minutes until smooth and elastic.

5.Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

6.Punch down the dough and divide it into three equal portions. Roll each portion into a long rope.
