1.In a large bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper. Mix well.

2.Add the lamb or goat meat to the marinade and toss to coat. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
