Ingredients

In the original Indonesian version of Wajik, palm sugar is commonly used as a sweetener. However, in this Caspian adaptation, we have replaced it with honey to suit the flavor profile of the target cuisine. Additionally, we have incorporated the use of coconut milk to enhance the tropical essence of the dish, which is a common ingredient in Caspian cuisine. Preparation

    Rinse the glutinous rice under cold water until the water runs clear.

    Place the rice in a bowl and cover it with water. Let it soak for at least 4 hours or overnight.

    Drain the soaked rice and transfer it to a steamer lined with cheesecloth.

    In a separate bowl, mix together the coconut milk, honey, and salt until well combined.

    Pour the coconut milk mixture over the rice, ensuring that all the grains are coated.

    Place the steamer over high heat and steam the rice for about 30-40 minutes, or until the rice is tender and sticky.

    Once cooked, remove the steamer from heat and let the rice cool for a few minutes.

    Transfer the sticky rice to a square or rectangular dish and press it down firmly to create an even layer.
