1.In a large pot, heat the olive oil over medium heat. Add the chopped onion and leeks, and sauté until they become translucent.

2.Stir in the minced garlic, ground cumin, ground coriander, paprika, and cayenne pepper (if using). Cook for an additional minute to release the flavors.

3.Add the roasted peanuts to the pot and stir well to coat them with the spices.

4.Pour in the vegetable broth and Belgian beer, and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20 minutes to allow the flavors to meld together.

5.Using an immersion blender or a regular blender, puree the soup until smooth and creamy.

6.Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.

7.Simmer the soup for an additional 5 minutes to heat through.
