Preparation

1.Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

2.In a large bowl, combine the ground pork, chopped onion, minced garlic, ground nutmeg, ground mace, dried thyme, dried parsley, salt, and pepper. Mix well until all the ingredients are evenly incorporated.

3.Roll out the homemade puff pastry into a rectangle, approximately 30cm x 40cm (12in x 16in).

4.Cut the pastry into smaller rectangles, each about 10cm x 15cm (4in x 6in).

5.Take a portion of the seasoned sausage meat and shape it into a log that fits the length of the pastry rectangle.

6.Place the sausage log onto the pastry and roll it up tightly, sealing the edges with a bit of water.

7.Repeat the process with the remaining pastry and sausage meat.

8.Brush the tops of the sausage rolls with the beaten egg wash.

9.Place the rolls onto the prepared baking sheet and bake for 25-30 minutes, or until the pastry is golden brown and the sausage is cooked through.
