1.Preheat the oven to 200°C (400°F).

2.Slice the eggplants lengthwise and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast in the oven for 25-30 minutes, or until the eggplants are tender and slightly charred.

3.Remove the eggplants from the oven and let them cool slightly. Once cooled, scoop out the flesh and discard the skin.
