In this Guamanian adaptation of Ackee and Saltfish, we incorporate Guamanian flavors and ingredients to create a unique twist. The original Jamaican recipe is traditionally cooked with onions, tomatoes, and scotch bonnet peppers, but in this Guamanian version, we replace the scotch bonnet peppers with local hot peppers for a touch of heat. Additionally, we enhance the dish with Guamanian herbs and spices, such as achote powder and fresh cilantro, to infuse it with the flavors of the Pacific Islands. Preparation

1.Heat vegetable oil in a large skillet over medium heat.

2.Add diced onion, minced garlic, and sliced hot peppers. Sauté until onions are translucent.

3.Stir in diced tomato and cook until softened.

4.Sprinkle achote powder over the mixture and stir well to combine.

5.Add the flaked salted fish to the skillet and cook for 5 minutes, stirring occasionally.

6.Gently fold in the drained ackee fruit and cook for an additional 5 minutes, being careful not to over-stir.
