Preparation

1.Rinse the rice under cold water until the water runs clear. Drain well.

2.In a medium-sized saucepan, heat the vegetable broth over medium heat until simmering.

3.In a separate large saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.

4.Add the rice to the saucepan with the onions and garlic, stirring to coat the rice with the oil.

5.Pour the simmering vegetable broth into the rice mixture. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed.

6.While the rice is cooking, prepare the cilantro lime shrimp. In a bowl, combine the shrimp, lime juice, lime zest, chopped cilantro, salt, and pepper. Let it marinate for 10 minutes.
