Preparation

1.In a large pot, heat the olive oil over medium heat. Add the sofrito and cook for 2-3 minutes until fragrant.

2.Add the rice to the pot and stir to coat it with the sofrito. Cook for another 2-3 minutes, stirring occasionally.

3.Add the pigeon peas, chicken broth, cumin, oregano, annatto powder, bay leaf, salt, and pepper to the pot. Stir well to combine.

4.Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the rice simmer for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.

5.Remove the pot from the heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
