Preparation

  1. 1.
In a bowl, combine the pineapple juice, soy sauce, orange juice, vinegar, honey, ketchup, minced garlic, grated ginger, cumin, paprika, cayenne pepper, black pepper, and salt. Mix well to create the marinade.
  2. 2.
Place the chicken pieces in a ziplock bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour, or overnight for best results.
  3. 3.
In a large skillet or wok, heat the vegetable oil over medium-high heat.
  4. 4.
Remove the chicken from the marinade, reserving the marinade for later use. Pat the chicken dry with paper towels.
  5. 5.
In a small bowl, whisk together the cornstarch and water to create a slurry.
  6. 6.
Add the chicken to the hot skillet and cook until golden brown and cooked through, about 5-7 minutes.
  7. 7.
Remove the chicken from the skillet and set aside.
  8. 8.
In the same skillet, pour in the reserved marinade and bring it to a boil. Cook for 2-3 minutes until the sauce thickens.
  9. 9.
Return the cooked chicken to the skillet and toss it in the thickened sauce until well coated.
  10. 10.
Garnish with chopped green onions and sesame seeds.
  11. 11.
Serve hot with steamed rice or Puerto Rican-style fried plantains.
