Preparation

1.Rinse the rice under cold water until the water runs clear. Set aside.

2.In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

3.Add the diced carrot and chopped spinach to the pot, and cook for a few minutes until the vegetables start to soften.

4.Stir in the paprika, ground cumin, ground coriander, and turmeric, and cook for another minute to toast the spices.

5.Add the mixed seafood to the pot and cook until the shrimp turns pink and the fish is cooked through.

6.Pour in the fish or vegetable broth and bring to a boil.

7.Stir in the rinsed rice, reduce the heat to low, cover the pot, and simmer for about 15-20 minutes, or until the rice is cooked and has absorbed the flavors of the broth.

8.Season with salt and pepper to taste.

9.Remove from heat and let the rice sit, covered, for 5 minutes to allow the flavors to meld.

10.Fluff the rice with a fork and garnish with fresh cilantro before serving.
