The traditional Mexican spices are replaced with a blend of aromatic Andhra spices like cinnamon, cloves, and cardamom. The tangy tamarind is added to balance the heat and add a touch of sourness. Preparation

1.Heat oil in a large pan or pressure cooker over medium heat.

2.Add the cinnamon stick, cloves, and cardamom pods. Sauté for a minute until fragrant.

3.Add the chopped onions and green chilies. Cook until the onions turn golden brown.

4.Add the ginger-garlic paste and cook for another minute.

5.Add the beef cubes and cook until they are browned on all sides.

6.Add the tomato puree, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well to coat the beef with the spices.

7.If using a pressure cooker, add 1 cup of water and pressure cook for 20-25 minutes until the beef is tender. If using a pan, cover and simmer for 1-2 hours until the beef is tender, adding water as needed.

8.Once the beef is tender, add the tamarind paste and simmer for another 5 minutes to allow the flavors to meld together.

9.Garnish with fresh cilantro leaves and serve hot with steamed rice or Andhra breads.
