Preparation
-
1.In a large mixing bowl, combine the flour and salt. Add the cold cubed butter and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
-
2.Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together. Divide the dough into two equal portions, shape them into discs, and wrap them in plastic wrap. Refrigerate for at least 30 minutes.
-
3.Preheat the oven to 190°C (375°F).
-
4.In a saucepan, combine the bakeapples, sugar, cornstarch, and salt. Cook over medium heat, stirring occasionally, until the mixture thickens and the bakeapples release their juices, about 10 minutes. Remove from heat and let it cool slightly.
-
5.Roll out one disc of dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish and press it gently into the bottom and sides.
-
6.In a separate bowl, whisk together the heavy cream, vanilla extract, and lemon juice. Pour the cream mixture over the bakeapple filling and gently stir to combine.
-
7.Roll out the second disc of dough and cut it into strips for a lattice pattern or leave it whole for a full crust. Place the dough over the filling and crimp the edges to seal. Brush the top crust with melted butter.
-
8.Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbly. Allow the pie to cool completely before serving.
Treat your ingredients with care...
- Bakeapples — Ensure that the bakeapples are ripe and juicy for the best flavor. If fresh bakeapples are not available, you can use frozen bakeapples, but thaw and drain them before using.
Tips & Tricks
- For a decorative touch, use a cookie cutter to cut out shapes from the top crust before placing it over the filling.
- Serve the pie warm with a scoop of vanilla ice cream for an extra indulgent treat.
- If you prefer a sweeter pie, you can increase the amount of sugar in the filling.
