While the original Turkish Baklava is traditionally made with phyllo dough, this Latin American adaptation incorporates a tropical twist by using plantain leaves instead. Preparation

    Preheat the oven to 180°C (350°F).

    Rinse the plantain leaves and pat them dry.

    In a saucepan, combine the sugar and water. Bring to a boil and simmer for 5 minutes to make a simple syrup. Set aside to cool.

    In a mixing bowl, combine the ground almonds, ground walnuts, shredded coconut, passion fruit juice, vanilla extract, and ground cinnamon. Mix well.

    Lay one plantain leaf on a baking dish and brush it with melted butter. Repeat this process with 6 more leaves, brushing each one with butter.

    Spread half of the nut and coconut mixture evenly over the plantain leaves.

    Layer the remaining 6 plantain leaves on top, brushing each one with melted butter.

    Cut the baklava into diamond-shaped pieces.
