1.Preheat the oven to 180°C (350°F).

2.Place the lamb sausages on a baking tray and drizzle with olive oil. Bake for 20-25 minutes or until cooked through.

3.Meanwhile, boil the potatoes in a large pot of salted water until tender. Drain the potatoes and return them to the pot.

4.In a small bowl, mix together the minced garlic, tahini, ground cumin, ground coriander, sumac, salt, and pepper.

5.Pour the tahini mixture over the potatoes and mash until smooth and creamy.

6.Heat a drizzle of olive oil in a skillet over medium heat. Add the mashed potatoes and cook for 2-3 minutes, stirring occasionally, until heated through.

7.Serve the lamb sausages on top of the mashed potatoes. Garnish with fresh parsley.
