Preparation

1.Place the potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

2.In a small saucepan, heat the milk and butter over low heat until the butter has melted. Pour the mixture over the potatoes and mash until smooth. Season with salt and pepper to taste. Keep warm.

3.In a large skillet, heat the vegetable oil over medium heat. Add the sausages and cook until browned on all sides, about 10 minutes. Remove the sausages from the skillet and set aside.

4.In the same skillet, add the sliced onion and cook until softened and lightly browned, about 5 minutes. Sprinkle the flour over the onions and cook for an additional minute.

5.Gradually whisk in the chicken or vegetable broth, scraping the bottom of the skillet to release any browned bits. Stir in the Bavarian mustard and simmer until the sauce has thickened, about 5 minutes.

6.Return the sausages to the skillet and cook for an additional 5 minutes, until heated through.

7.Serve the sausages on a bed of creamy mashed potatoes, topped with the mustard sauce. Garnish with fresh parsley.
