Preparation

1.Preheat the oven to 200°C (400°F).

2.Place the sausages on a baking sheet and bake for 20-25 minutes, or until cooked through and golden brown.

3.In the meantime, boil the potatoes in a large pot of salted water until tender. Drain and set aside.

4.Heat the olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, and sauté until translucent and fragrant.

5.Add the dried oregano, dried thyme, and paprika to the skillet, and cook for an additional minute to release the flavors.

6.Pour in the chicken or vegetable broth and bring to a simmer. Cook for 2-3 minutes to allow the flavors to meld together.

7.Mash the boiled potatoes with a potato masher or fork until smooth. Stir in the Greek yogurt and season with salt and pepper to taste.

8.Serve the sausages on a bed of creamy potato mash, drizzled with the Mediterranean herb-infused onion gravy. Garnish with fresh parsley.
