1.Preheat the oven to 400°F (200°C).

2.Place the sausages on a baking sheet and bake for 20-25 minutes, or until cooked through and browned.

3.Meanwhile, place the potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.

4.Drain the potatoes and return them to the pot. Add the milk, butter, salt, black pepper, garlic powder, paprika, dried thyme, dried oregano, onion powder, and cayenne pepper (if using).

5.Mash the potatoes until smooth and creamy.

6.Serve the soulful sausages on top of a generous portion of mashed potatoes, and drizzle with gravy.
