Treat your ingredients with care...
- Ginger — Use fresh ginger if possible for a more intense flavor. Grate it finely or use ginger paste for convenience.
- Lemongrass — Trim the tough outer layers of the lemongrass stalks and finely chop the tender inner part or use lemongrass paste for ease.
- Chili — Adjust the amount of chili paste according to your spice preference. Add more for extra heat or reduce for a milder flavor.
- Pineapple and Mango — Choose ripe and juicy fruits for the best flavor. Cut them into chunks of similar size for even grilling.
- Cilantro — If you're not a fan of cilantro, you can substitute it with fresh mint leaves for a different herbaceous note.
Tips & Tricks
- Soak wooden skewers in water for 30 minutes before grilling to prevent them from burning.
- Baste the sausages with the marinade while grilling for an extra burst of flavor.
- Serve the grilled sausages in a warm bun with your favorite condiments for a delicious sausage sandwich.
- Experiment with different types of sausages, such as spicy Italian or smoky chorizo, to vary the flavors.
- If you prefer a sweeter marinade, add a tablespoon of honey to the mixture.
