Preparation

1.Preheat the oven to 200°C (400°F).

2.In a small bowl, mix together the ground cumin, ground coriander, sumac, salt, and pepper.

3.Rub the spice mixture all over the beef fillet, ensuring it is evenly coated.

4.Heat olive oil in a skillet over medium-high heat. Sear the beef fillet on all sides until browned. Remove from the skillet and set aside.

5.In the same skillet, melt the butter and sauté the chopped onion and minced garlic until softened and golden.

6.Roll out the puff pastry sheets on a lightly floured surface. Place the sautéed onion and garlic mixture on one sheet of puff pastry.

7.Place the seared beef fillet on top of the onion and garlic mixture.

8.Carefully wrap the beef fillet with the puff pastry, sealing the edges.

9.Brush the pastry with the beaten egg wash for a golden finish.

10.Transfer the wrapped beef Wellington onto a baking sheet and bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the beef is cooked to your desired doneness.
