Preparation

1.In a large mixing bowl, combine the flour, instant yeast, sugar, and salt.

3.Gradually pour the coconut milk mixture into the dry ingredients, stirring until a dough forms.

4.Knead the dough on a lightly floured surface for about 5 minutes, until it becomes smooth and elastic.

5.Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.

6.Meanwhile, in a skillet, sauté the onion, bell pepper, and garlic until softened.

7.Add the diced seafood, thyme leaves, paprika, salt, and pepper. Cook until the seafood is cooked through.

8.Preheat the oven to 180°C (350°F).

9.Punch down the risen dough and divide it into two equal portions.

10.Roll out one portion of the dough into a circle, about 1/4 inch thick.

11.Spread half of the seafood filling evenly over the dough, leaving a small border around the edges.

12.Roll out the second portion of the dough into a circle of the same size and place it on top of the filling.

13.Press the edges of the dough together to seal the pogača.

14.Transfer the pogača to a baking sheet lined with parchment paper.

15.Repeat steps 10-14 with the remaining dough and filling.
