While the Greek Gyros typically uses lamb or pork, the Croatian-style Gyros incorporates a mix of lamb and beef for a richer flavor. Preparation

1.In a large mixing bowl, combine the ground lamb, ground beef, chopped onion, minced garlic, dried oregano, dried thyme, paprika, ground cumin, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.

2.Divide the meat mixture into 4 equal portions and shape each portion into a long, thin log.

3.Preheat a grill or grill pan over medium-high heat. Cook the meat logs for about 10-12 minutes, turning occasionally, until they are cooked through and nicely browned.

4.While the meat is cooking, warm the pita breads on the grill for a minute on each side.

5.Once the meat logs are cooked, remove them from the grill and let them rest for a few minutes. Then, slice the logs into thin strips.

6.To assemble the gyros, spread a generous amount of tzatziki sauce on each warmed pita bread. Place a handful of the sliced meat on top of the sauce. Garnish with sliced tomatoes, cucumbers, and red onions.

7.Roll up the pita bread tightly, enclosing the filling. Secure with a toothpick if needed.

8.Serve the Croatian-style Gyros immediately and enjoy!
