Preparation

1.In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and bell peppers. Sauté until the vegetables are softened.

2.Add the tomatoes, tomato paste, paprika, cumin, oregano, and bay leaf to the pot. Stir well to combine the ingredients and cook for 2-3 minutes.

3.Pour in the coconut milk and fish or seafood broth. Bring the mixture to a simmer.

4.Cut the fish fillets into bite-sized pieces and add them to the pot. Cook for 5 minutes.

5.Add the shrimp and mussels to the pot. Cook for an additional 5 minutes or until the shrimp are pink and the mussels have opened.

6.Stir in the lime juice and season with salt and pepper to taste.

7.Remove the bay leaf from the pot. Serve the Brazilian Bouillabaisse hot, garnished with fresh cilantro.
