Preparation

  1. 1.
In a large mixing bowl, combine the ground pork, ground beef, chopped onion, minced garlic, dried thyme, dried rosemary, paprika, ground nutmeg, ground coriander, ground black pepper, salt, ground cloves, ground allspice, and cayenne pepper (if using).
  2. 2.
In a separate small bowl, mix together the breadcrumbs and milk until well combined. Let it sit for a few minutes to allow the breadcrumbs to absorb the milk.
  3. 3.
Add the breadcrumb mixture to the meat mixture and mix well until all the ingredients are evenly incorporated.
  4. 4.
Shape the mixture into sausages of your desired size and thickness.
  5. 5.
Heat the vegetable oil in a large skillet over medium heat. Add the sausages and cook until browned on all sides, about 10-12 minutes.
  6. 6.
Once cooked, remove the sausages from the skillet and let them rest for a few minutes before serving.

Treat your ingredients with care...

  • Ground pork and beef — Make sure to use lean ground meat for a healthier option. If desired, you can also mix in some ground veal for added tenderness.
  • Dried thyme and rosemary — If you have fresh herbs available, feel free to use them instead. Simply double the amount of fresh herbs compared to dried.

Tips & Tricks

  • For a smokier flavor, you can add a dash of liquid smoke to the meat mixture.
  • Serve the Boutefas with a side of tangy mustard or a creamy horseradish sauce for an extra kick.
  • If you prefer a milder taste, reduce the amount of cayenne pepper or omit it altogether.
  • These sausages can be grilled or baked in the oven for a different cooking method.
  • Leftover Boutefas can be sliced and used in sandwiches or added to pasta dishes for a delicious twist.

Serving advice

Serve the Boutefas hot, accompanied by a generous portion of sautéed vegetables or a fresh green salad. Garnish with a sprinkle of fresh herbs for an added touch of freshness.

Presentation advice

Arrange the cooked sausages on a platter, placing them diagonally for an appealing visual effect. Surround them with colorful roasted vegetables or a bed of creamy mashed potatoes for an enticing presentation.
