Preparation

1.Once the potatoes are boiled, drain them and let them cool slightly. Grate the potatoes using a box grater or a food processor.

2.In a large non-stick skillet, melt the butter and olive oil over medium heat.

3.Add the grated potatoes to the skillet and spread them out evenly. Press them down gently with a spatula to form a compact layer.

4.Cook the potatoes for about 10-12 minutes, or until the bottom is golden and crispy. Flip the Choesels using a large spatula and cook for another 10-12 minutes until the other side is golden and crispy as well.

5.Sprinkle the grated Swiss cheese evenly over the Choesels and let it melt for a minute or two.

6.Remove the skillet from heat and sprinkle the fresh herbs over the Choesels. Season with salt and pepper to taste.
