Preparation

1.In a large bowl, combine the red wine, red wine vinegar, minced garlic, chopped onion, diced carrots, diced celery, prunes, tomato paste, bay leaves, dried rosemary, dried thyme, sugar, salt, and pepper. Mix well.

2.Add the beef chunks to the marinade and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight for the best flavor.

3.Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Remove the beef from the marinade, reserving the marinade for later use.

4.Sear the beef in batches until browned on all sides. Remove the beef from the pot and set aside.

5.In the same pot, add the reserved marinade and beef broth. Bring to a boil, scraping the bottom of the pot to release any browned bits.

6.Return the beef to the pot and reduce the heat to low. Cover and simmer for 2 to 3 hours, or until the beef is tender and easily falls apart.

7.Remove the bay leaves from the stew and adjust the seasoning with salt and pepper if needed.
