Preparation

1.In a saucepan, combine the coconut milk, rice, and salt. Bring to a boil over medium heat.

2.Reduce the heat to low, cover the saucepan, and let the rice simmer for 15-20 minutes, or until the liquid is absorbed and the rice is tender.

3.While the rice is cooking, peel the plantains and cut them into thick slices.
