In this Tanzanian adaptation of Amritsari kulcha, we incorporate Tanzanian spices and flavors to create a unique twist. The stuffing is made with local Tanzanian vegetables and herbs, giving it a distinct taste. Preparation

1.In a large mixing bowl, combine the all-purpose flour, baking powder, and salt for the bread. Mix well.

2.Add warm water, plain yogurt, and vegetable oil to the flour mixture. Knead until a soft and smooth dough forms. Cover the dough and let it rest for 30 minutes.

3.In the meantime, prepare the stuffing. Heat a little vegetable oil in a pan over medium heat.

4.Add the chopped onions and green chilies to the pan and sauté until the onions turn translucent.

5.Add the grated carrots, chopped cabbage, and bell peppers to the pan. Cook for a few minutes until the vegetables are slightly tender.

6.Sprinkle ground cumin, ground coriander, turmeric powder, and salt over the vegetables. Mix well and cook for another 2-3 minutes. Remove from heat and let the stuffing cool.

7.Divide the dough into small portions and shape them into balls. Flatten each ball and place a spoonful of the cooled stuffing in the center.

8.Bring the edges of the dough together to seal the stuffing and shape it into a ball again. Gently flatten the ball with your hands.

9.Heat a griddle or a non-stick pan over medium heat. Place the stuffed bread on the hot griddle and cook until golden brown spots appear on both sides, brushing with oil if desired.
