Preparation

  1. 1.
In a bowl, combine the vegetable oil, ground ginger, ground garlic, ground cumin, ground coriander, salt, and pepper to create the marinade.
  2. 2.
Place the chicken breasts in the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or refrigerate overnight for enhanced flavor.
  3. 3.
Preheat the grill or a skillet over medium-high heat.
  4. 4.
Cook the marinated chicken breasts for about 6-8 minutes per side, or until they reach an internal temperature of 165°F (74°C).
  5. 5.
While the chicken is cooking, prepare the sauce by combining the yogurt, lemon juice, and chili powder in a small bowl. Mix well.
  6. 6.
Once the chicken is cooked, remove it from the heat and let it rest for a few minutes. Then, slice it into thin strips.
  7. 7.
Toast the burger buns until golden brown.
  8. 8.
Assemble the sandwiches by spreading the yogurt sauce on the bottom half of each bun. Top with lettuce, sliced tomatoes, onions, and the sliced spiced chicken. Cover with the top half of the bun.
  9. 9.
Serve the Tanzanian-inspired Spiced Chicken Sandwiches immediately and enjoy!

Treat your ingredients with care...

  • Chicken breasts — Ensure the chicken breasts are evenly coated with the marinade for maximum flavor. If desired, you can pound the chicken breasts to an even thickness before marinating to ensure they cook evenly.
  • Yogurt — Use plain yogurt without any added flavors or sweeteners for the sauce. Greek yogurt works well for a thicker consistency.

Tips & Tricks

  • For an extra kick of heat, add a pinch of cayenne pepper to the chicken marinade.
  • If you prefer a milder flavor, reduce the amount of chili powder in the sauce.
  • Customize your sandwich by adding avocado slices or pickles for additional flavor and texture.
  • For a vegetarian version, substitute the chicken with grilled halloumi cheese or marinated tofu.
  • If you don't have a grill or skillet, you can also bake the marinated chicken breasts in a preheated oven at 400°F (200°C) for approximately 20-25 minutes.
