Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the lamb cubes and cook until browned on all sides. Remove the lamb from the pot and set aside.

2.In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent.

3.Return the lamb to the pot and add the diced potatoes, sliced carrots, bell peppers, and tomatoes.

4.Sprinkle the ground cumin, paprika, and ground coriander over the ingredients. Season with salt and pepper to taste.

5.Stir well to combine all the ingredients. Cover the pot and simmer on low heat for about 1.5 to 2 hours, or until the lamb is tender and the vegetables are cooked through.
