Treat your ingredients with care...
- Corn tortillas — To prevent them from cracking, warm them up before rolling by heating them in a dry skillet or microwaving them for a few seconds.
- Enchilada sauce — If you prefer a spicier sauce, add a pinch of cayenne pepper or a diced jalapeño to the sauce while heating it.
- Shredded chicken — You can use leftover cooked chicken or quickly cook chicken breasts and shred them using two forks.
Tips & Tricks
- For a smoky flavor, lightly toast the corn tortillas on a dry skillet before rolling them.
- Customize the filling by adding black beans, corn, or diced tomatoes.
- Top the enchiladas with sliced avocado, sour cream, or a squeeze of fresh lime juice for extra flavor.
- If you prefer a vegetarian version, substitute the chicken with sautéed vegetables or tofu.
- Make a double batch of enchiladas and freeze the extras for a quick and delicious meal later.
