Treat your ingredients with care...

  • Chicken livers — Make sure to trim any connective tissue or membranes before cooking.
  • Sweetbreads — Soak the sweetbreads in cold water for 1 hour before cooking to remove any impurities.
  • Veal brains — Gently blanch the veal brains in boiling water for a few minutes, then remove the outer membrane before using.

Tips & Tricks

  • For a richer flavor, marinate the offal meats in white wine and herbs for a few hours before cooking.
  • If you prefer a thicker sauce, mix a tablespoon of flour with a little water and add it to the skillet during the cooking process.
  • Serve Finanziera alla Moda with crusty bread or polenta to soak up the delicious sauce.
  • Feel free to add other vegetables of your choice, such as bell peppers or zucchini, to personalize the dish.
  • Leftovers can be refrigerated and enjoyed the next day, as the flavors tend to develop and intensify.
