Preparation

1.Preheat the oven to 375°F (190°C).

2.In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

3.Add the flour to the skillet and cook for 1-2 minutes, stirring constantly.

4.Gradually whisk in the fish or seafood broth, followed by the heavy cream. Continue whisking until the sauce thickens.

5.Add the shrimp, scallops, and white fish to the skillet. Stir gently to coat the seafood with the sauce. Cook for 3-4 minutes, until the seafood is just cooked through.

6.Stir in the chopped parsley, dried thyme, salt, and pepper. Remove from heat and let the mixture cool slightly.

7.Line a pie dish with one of the pie crusts. Pour the seafood mixture into the dish.

8.Cover the pie with the second pie crust, sealing the edges. Cut a few slits on the top crust to allow steam to escape.
