Preparation

1.In a large bowl, combine the meat, ground coriander, ground cumin, ground turmeric, paprika, salt, and black pepper. Mix well to ensure the meat is evenly coated with the spices.

2.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.

3.Add the marinated meat to the pot and cook until browned on all sides.

4.Pour in the coconut milk and water, and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the meat is tender.

5.While the meat is simmering, rinse the basmati rice under cold water until the water runs clear. Drain the rice.

6.In a separate pot, combine the drained rice, 1 cup of coconut milk, and 1 cup of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

7.Fluff the cooked rice with a fork and keep it warm until ready to serve.

8.Once the meat is tender, remove the pot from the heat and let it rest for a few minutes.

9.Serve the Kenyan-style Gamula over a bed of coconut rice. Garnish with fresh cilantro.
