Preparation

1.In a large mixing bowl, combine chickpea flour, turmeric powder, red chili powder, cumin powder, coriander powder, salt, and baking soda.

2.Gradually add water to the mixture and knead it into a firm dough. Adjust the water quantity as needed.

3.Divide the dough into small portions and shape each portion into a long, thin strip using your hands or a sev maker.

4.Heat oil in a deep pan or kadai over medium heat.

5.Once the oil is hot, carefully drop a few strips of the dough into the oil and fry them until golden brown and crispy. Repeat this process with the remaining dough.

6.Remove the fried Ganthiya from the oil and place them on a paper towel to drain excess oil.

7.Allow the Ganthiya to cool completely before serving.

8.To serve, arrange the crispy Ganthiya on a plate and drizzle with tamarind chutney and green chutney. Sprinkle chaat masala on top.
