Preparation

1.Heat the olive oil in a large pot over medium heat. Add the beef chunks and brown them on all sides. Remove the beef from the pot and set aside.

3.Add the carrots, potatoes, red bell pepper, and tomatoes to the pot. Stir and cook for a few minutes until the vegetables start to soften.

4.Stir in the tomato paste, cumin, coriander, and bay leaf. Cook for another minute to allow the flavors to meld.

5.Return the browned beef to the pot and pour in the beef broth and water. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1 hour or until the beef is tender.

6.Stir in the soy sauce, sun-dried tomatoes, and olives. Simmer for an additional 10 minutes to allow the flavors to blend.

7.Season with salt and pepper to taste. Remove the bay leaf.
