In this fusion adaptation, we have incorporated elements from both Indian and fusion cuisines. While the original Magaj is traditionally made with besan (chickpea flour), ghee (clarified butter), and sugar, our fusion version includes the addition of coconut milk and a blend of aromatic spices to enhance the flavor profile. Preparation

1.In a large non-stick pan, heat the ghee over medium heat.

2.Add the almond flour and desiccated coconut to the pan. Stir continuously for 2-3 minutes until the mixture turns golden brown and releases a nutty aroma.

3.Reduce the heat to low and add the coconut milk, sugar, cardamom powder, nutmeg powder, saffron strands, and a pinch of salt. Mix well until the sugar dissolves completely.

4.Cook the mixture on low heat, stirring continuously, for about 10-12 minutes or until it thickens and starts to leave the sides of the pan.

5.Remove the pan from heat and let the mixture cool for a few minutes.

6.Grease a square or rectangular dish with ghee and transfer the mixture into it. Spread it evenly and press it down gently.

7.Sprinkle the chopped roasted almonds on top and press them lightly into the mixture.

8.Allow the fusion delight to cool completely at room temperature, then refrigerate for at least 2 hours to set.

9.Once set, cut into desired shapes and serve chilled.
