1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

2.Add the cubed lamb to the pot and cook until browned on all sides.

3.Drain the soaked split peas and add them to the pot along with the diced tomatoes, ground turmeric, ground cumin, ground coriander, and ground cinnamon. Stir well to combine.

4.Pour in the beef or vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for about 1 hour or until the lamb is tender and the split peas are cooked through.

5.Add the saffron threads along with the soaking water to the pot, followed by the lemon juice. Season with salt and pepper to taste. Simmer for an additional 10 minutes to allow the flavors to meld together.

6.Serve the Gheymeh Nesar hot, garnished with fresh cilantro or parsley. Accompany it with fluffy basmati rice for a complete and satisfying meal.
