Ingredients
In this Tibetan-inspired adaptation of Gỏi cuốn, we incorporate Tibetan spices and ingredients to infuse the dish with the flavors of the Himalayas. The traditional Vietnamese dipping sauce is replaced with a tangy Tibetan sauce made with ingredients like Sichuan peppercorns, garlic, and soy sauce. Preparation

1.In a bowl, marinate the tofu or shredded chicken with the Tibetan spice blend for 15 minutes.

2.Prepare a large bowl of warm water. Dip one rice paper wrapper into the water for a few seconds until it softens.

3.Place the softened rice paper on a clean surface. Arrange a few slices of marinated tofu or shredded chicken in the center of the wrapper.

4.Layer cucumber, carrot, bell pepper, bean sprouts, cilantro, mint, and basil on top of the protein.

5.Fold the sides of the rice paper over the filling, then roll tightly from bottom to top, sealing the roll.

6.Repeat the process with the remaining ingredients.

7.For the Tibetan dipping sauce, combine soy sauce, rice vinegar, Sichuan peppercorns, and minced garlic in a small bowl. Mix well.

8.Serve the Tibetan-inspired Fresh Spring Rolls with the dipping sauce on the side.

- Tofu — For a firmer texture, press the tofu before slicing it. Wrap the tofu block in a clean kitchen towel and place a heavy object on top for 15-20 minutes to remove excess moisture.
