Ingredients
In this Guamanian adaptation, we have replaced the traditional Venezuelan queso de mano cheese with a local Guamanian cheese, such as fresh grated coconut or grated latiya cheese. Additionally, we have incorporated flavors commonly found in Guamanian cuisine, such as cinnamon, to enhance the taste profile of the dish. Preparation

1.Preheat the oven to 180°C (350°F).

2.Peel the plantains and cut them lengthwise into thin strips.

3.In a small bowl, mix together the grated latiya cheese or fresh grated coconut, brown sugar, and ground cinnamon.

4.Take a plantain strip and place a spoonful of the cheese mixture at one end. Roll the plantain strip tightly, enclosing the filling.

5.Repeat the process with the remaining plantain strips and filling.

6.Heat the vegetable oil in a large skillet over medium heat. Fry the plantain rolls until golden brown on all sides.

7.Transfer the fried rolls to a baking dish and bake in the preheated oven for 10-15 minutes, until the cheese is melted and bubbly.
