In this Gibraltarian adaptation, we incorporate the unique flavors and ingredients of Gibraltarian cuisine. While the original Croatian Gregada uses Mediterranean fish and local herbs, our Gibraltarian-style Seafood Stew includes a wider variety of seafood commonly found in the waters surrounding Gibraltar. Additionally, we infuse the stew with Gibraltarian spices and seasonings to create a distinct flavor profile that reflects the local culinary traditions. Preparation

1.Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and bell peppers. Sauté until the vegetables are softened.

2.Add the diced tomatoes, tomato paste, smoked paprika, cumin, coriander, and bay leaf. Stir well to combine.

3.Pour in the fish or vegetable broth and white wine. Bring the mixture to a simmer.

4.Add the fish chunks, prawns, and mussels to the pot. Season with salt and pepper to taste.

5.Cover the pot and let the stew simmer for about 15-20 minutes, or until the seafood is cooked through and the mussels have opened.

6.Remove the bay leaf and discard.
