1.In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.

2.In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant.

3.Add the minced chipotle peppers, ground cumin, and dried oregano to the pot. Stir well to combine and cook for an additional minute.

4.Return the browned beef stew meat to the pot and pour in the beef broth. Bring to a boil, then reduce the heat to low and simmer for 1 hour, or until the meat is tender.

5.Add the sliced carrots, diced potatoes, and diced zucchini to the pot. Simmer for an additional 20 minutes, or until the vegetables are cooked through.
