Preparation

  1. 1.
In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.
  2. 2.
In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant.
  3. 3.
Add the minced chipotle peppers, ground cumin, and dried oregano to the pot. Stir well to combine and cook for an additional minute.
  4. 4.
Return the browned beef stew meat to the pot and pour in the beef broth. Bring to a boil, then reduce the heat to low and simmer for 1 hour, or until the meat is tender.
  5. 5.
Add the sliced carrots, diced potatoes, and diced zucchini to the pot. Simmer for an additional 20 minutes, or until the vegetables are cooked through.
  6. 6.
Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro.

Treat your ingredients with care...

  • Chipotle peppers — Adjust the amount of chipotle peppers according to your spice preference. For a milder flavor, use only one pepper or remove the seeds before mincing.

Tips & Tricks

  • For an extra smoky flavor, you can roast the chipotle peppers before mincing them.
  • If you prefer a thicker stew, you can mix a tablespoon of cornstarch with a little water and add it to the pot during the last few minutes of cooking.
