Preparation

1.If using fresh jackfruit, remove the seeds and cut the flesh into bite-sized pieces. If using canned jackfruit, drain and rinse well.

2.In a large pot, heat the vegetable oil over medium heat. Add the shallots and garlic, and sauté until fragrant.

3.Add the coriander powder, turmeric powder, galangal powder, and chili powder to the pot. Stir well to coat the shallots and garlic with the spices.

4.Add the jackfruit to the pot and stir to combine with the spices.

5.Pour in the coconut milk and add the grated palm sugar. Stir until the palm sugar has dissolved.

6.Add the bay leaves and salt to the pot. If needed, add enough water to cover the jackfruit.

7.Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for 2-3 hours, or until the jackfruit is tender and the flavors have melded together.

8.Stir occasionally and add more water if needed to prevent the stew from drying out.
