Preparation

1.Preheat the oven to 160°C (320°F).

2.Drain and rinse the jackfruit, then cut it into bite-sized pieces.

3.In a large oven-safe pot, heat the olive oil over medium heat. Add the onion, garlic, ginger, lemongrass, and galangal. Sauté until fragrant.

4.Add the coriander powder, cumin powder, turmeric powder, nutmeg, cinnamon powder, salt, and black pepper. Stir well to coat the aromatics.

5.Add the jackfruit to the pot and stir to combine with the spices.

6.Pour in the vegetable broth and white wine. Bring to a simmer.

7.Cover the pot and transfer it to the preheated oven. Cook for 2 hours, or until the jackfruit is tender.

8.Remove the pot from the oven and place it back on the stovetop over low heat.

9.Stir in the coconut milk, honey, soy sauce, and tamarind paste. Simmer for an additional 10 minutes to allow the flavors to meld.
