Ingredients

In the original Indonesian Gudeg, palm sugar and coconut milk are used to create a sweet and creamy base. However, in Gudeg Gambian Style, we adapt the recipe to Gambian cuisine by incorporating local spices and flavors. The dish is infused with aromatic spices such as ginger, garlic, and chili, which add a subtle heat and depth of flavor. Additionally, we use Gambian jackfruit and local meat options to enhance the dish's authenticity and adapt it to the local palate. We alse have the original recipe for Gudeg Yogya, so you can check it out.

Treat your ingredients with care...

  • Gambian jackfruit — Make sure to use both ripe and unripe jackfruit to achieve the desired texture and flavor. Ripe jackfruit adds sweetness, while unripe jackfruit provides a meat-like texture.
  • Meat — Choose your preferred meat option, such as chicken, beef, or goat. Ensure that the meat is cut into small, bite-sized pieces for even cooking.

Tips & Tricks

  • For a spicier version, increase the amount of red chilies or add a dash of hot sauce.
  • Serve Gudeg Gambian Style with a side of pickled vegetables or sliced fresh cucumbers for a refreshing contrast.
  • If you prefer a thicker stew, you can mash some of the jackfruit to create a thicker consistency.
  • Experiment with different meat options to find your favorite combination of flavors.
