Preparation

1.Rinse the rice under cold water until the water runs clear. Drain and set aside.

2.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until translucent.

3.Add the minced garlic and grated ginger to the pot and cook for another minute, stirring constantly.

4.Stir in the ground cumin, ground coriander, cayenne pepper, turmeric powder, and salt. Cook for a minute to toast the spices and release their flavors.

5.Add the rinsed rice to the pot and stir well to coat the grains with the spice mixture.

6.Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.

7.Remove the pot from the heat and let it sit, covered, for 5 minutes to allow the rice to steam.

8.Fluff the rice with a fork and stir in the chopped peanuts.

9.Garnish with fresh cilantro and serve hot.
